Ingredients
- Dried or deseeded cherries
- Prunes
- Raisins
- Red wine
- Rum
- Butter
- Brown sugar
- Eggs
- Flour
- Nutmeg
- Cinnamon
- Baking powder
- Browning
- Spray oil
Method
- Add the below to a measuring jor bowl:
- 1 cup of deseeded or dried cherries
- 1 cup of prunes
- 1 cup of raisins
- Add the below liquids in equal measurements until the fruits are fully covered
- Red wine
- Rum
- Water
- Soak the fruits for ~3 hours
- In a bowl add:
- 3 tbsps of butter
- ½ cup of brown sugar
- Whisk with a fork until fluffy (~10 minutes)
- In a separate bowl, whisk together 4 eggs
- In a new bowl, add:
- 2.5 cups of flour
- 1 tsp. of nutmeg
- 1 tsp. of cinnamon
- A pinch of salt
- 1 tsp. of baking powder
- Lime zest
- Mix all together
- Thoroughly blend your rum and wine soaked fruits (including the liquids soaked in)
- Combine together
- Butter and sugar mix
- Add rum/ wine soaked fruits, mix
- Sieve in dry mix, mix
- Whisked eggs, mix
- 3 tsps of browning
- Add spray oil to a baking tray, then your cake mix
- Bake on 170°C for 1 hour
