Ingredients
- Spaghetti
- Frankfurters
- Red onion
- Bell pepper
- Oil
- Green seasoning
- Salt
- Garlic granules
- Paprika
- Black pepper
- Stock cube
- Tomato paste
- Butter
- Boiled egg
Method
- Boil ca. 200 grams of uncooked spaghetti as per the instructions on the pack with a pinch of salt
- Prepare the following:
- 2 frankfurters (already cooked), chopped
- ½ red onion, sliced
- 1 bell pepper, across 2 colours, sliced
- In a wok, add 2 tbsps of olive oil
- Heat up on a hot temperature for ca. 2 minutes
- Add 2 tbsps of green seasoning/ epis, cook for 1 minute
- Add ¾ of the red onion sliced, sauté for 2 minutes
- Add your chopped frankfurters, cook down for 2-3 minutes
- Add in your peppers, cook down for 2-3 minutes. Season with:
- ½ tsp. of salt
- 1 tsp. of garlic granules
- ½ tsp. of paprika
- ½ tsp. of black pepper
- 1 chicken stock cube
- Add 3 tbsps of tomato paste along with 4-5 tbsps of pasta water
- Add 1 whole scotch bonnet pepper
- Simmer for 10 minutes
- Add and mix in your spaghetti bit by bit, on top, add 1 tbsps of butter
- Add the rest of your red onion on top
- Simmer for 5 minutes on a low to medium temperature
- Garnish with parsley
- Serve with a hard boiled egg
